Charming house wih character
In the heart of Lavaur, in the region called Pays de Cocagne, we welcome you in our guesthouse, a beautiful 19th century dwelling.
This mansion was built in 1830 by Guillaume Daguilhon Pujol, subprefect at that time, to set up the sub-prefecture in it. The sub-prefecture will be housed in the mansion until it is bought and privatized in the 1920s.
In 2018, we fell in love with this mansion and decided to give it a new lease on life with a project of high standing accommodation with a restaurant.

We restored and decorated the mansion to offer you 6 elegant and spacious rooms as well as areas to share. We wanted to give the place a modern atmosphere while keeping the character of the mansion.

Seasonal cuisine with local products
Pierre Birolini, our 26-year-old chef, has already a rich culinary experience.
He is the 3rd generation cook of his family and likes travels and good food. He has already been around in Spain, Corsica and the Basque Country.
He brought back a cuisine with different influences, mixing traditional Basque, Corsican and Occitan dishes with a hint of Nordic flavours (home-smoked products) plus a hint of modernity
Christophe Lefevre brings the madness of his 50 years. He likes to break the rules by offering traditional cuisine that is revisited, inventive and original. He likes surprising combinations such as Jerusalem artichokes with coffee or cauliflower with vanilla.
His signature dish is the "cheese in 2 ways" or an ingenious combination of dessert in cheese or cheese in dessert? He does not know monotony and the most important thing for him is to constantly question himself, to look for new textures and flavours for the pleasure of the senses.

Pierre, the chef, treats you with a wide variety of simple dishes, changing with the season, to favour products quality and freshness.
We mainly get our supplies from local farmers (meat, cheese, vegetables).

The 6 rooms
All the rooms are spacious and bathed in daylight, have a view on the garden and are equipped with a fan for the summer nights.
Each room has a private bathroom, a high quality and large dimensions bedding, a flat screen television and a Wi-Fi connexion. At your disposal in the rooms: kettle, coffee, tea, herbal tea, and in the bathroom: a hair dryer and bath amenities.
Two rooms on the ground floor also have a kitchenette with equipments for people with limited mobility.
Each room is decorated based on a theme that reflects the personality of the owner of the place.
